Dear Chris
Oh my goodness, did you realise that you guys hit a bench mark last night? Food, service, people………ahhh-mazing!
Let me start at the beginning…..
Planning
YOU make my life soooo easy with the planning. You know what I want before I do. I know when you say “leave it with me” that I will receive something outstanding.
And then “bling” (insert magic wand here) like magic everything appears…perfect. I will always be indebted to you for making me look good.
People
I can’t even begin to tell you how wonderful you and your team are. When I arrive at the event and I see Kristen I immediately relax as I know she is across everything and will make sure the event is a success. Simon, Liz and the rest of the crew are all wonderful. The feedback I have had about your staff last night has been exceptional!
Service
Service from the very beginning (planning onwards) is first class. Now having said this, sometimes the delivery of service at an event can be difficult…. But not for your team. ALL of the wait staff last night were brilliant! One of the Management Team said to me this morning “Every time I turned around, someone was offering me food or drink”. That says a lot. The staff were so professional and so efficient. I could not fault one single thing.
Food
Where to begin….sigh…..
We were all in gastronomic heaven last night. Every mouthful was a delight to the senses. I can still taste the Chicken and Kaffir lime thingy’s…. Wish I had some now… You could literally watch people have a bite of something and their eyes roll back in their head with ecstasy!
Chris, I know I have rambled on above, but I wanted to get the point across to you that it was seriously the best ever ever ever.
Can you please forward this email to all involved and in particular, Craig and the directors, I want everyone to know how grateful not only I am, but Julieanne (CEO) , Bill Grant (Chairman) and ALL of the BAC team are.

Dear Craig,
I wanted to write to you, on paper, the old fashioned way as I see a direct parallel between this and how your staff conducted themselves throughout our recent event, the old fashioned way…good service, can-do attitudes and professionalism beyond what is expected in this day and age.
I know what to expect when I book Sustainable for our charters on Micat, professionals in their field, neat and tidy presentation and smiles on tap. For the national vehicle launch event on Moreton Island on the 3rd of August 2011, with its months of logistical planning, I saw another side, possibly an even better side of your company and its staff.
Chris Cole is singled out for his optimism under trying circumstances and his pure nerve to fight for what he saw as quality at every turn.
Also to be singled out is Kristen, your on-island catering manager who, like Chris managed to keep a professional head in difficult circumstances and in leading her team through some very exhausting days. Her team were always courteous, professional and respectful to the needs of the managing parties.
Craig, your team is a credit to you. I do believe that our staff are our biggest asset and as representatives of your company, your staff will do you proud every time.

Thank you very much for a delightful evening on Wednesday. The food was simply WONDERFUL (my especial favourite would have to be the duck and chestnut soup), and your team were great hosts. The night was also a great opportunity for me to meet new people and reconnect with some more familiar faces, and I greatly appreciate this.

Hi Craig,
We just wanted to say thankyou to the whole team involved in catering our wedding at Lightspace on 12th March, this year. We were really pleased with the professionalism of the wait staff and the standard of the food and have had many compliments on the food both throughout the evening and since the day.
We also wanted to say a special thank you to Chris Cole for his hard work, excellent follow-up and friendly yet professional style – Chris really did help to make the process of planning our wedding less stressful and more enjoyable on the day. We were also impressed that Chris, despite having other commitments on the day, made an effort to be there at our wedding during critical points of the event. As his employer, we felt you should know what a great job we thought he did and how happy we were with his assistance during the lead up to and on the day of our wedding.
We would definitely use Wine & Dine’m for other functions in the future and will have no hesitation recommending you to our family and friends.

Hi Chris
A big thanks to you and your team from last night. It was very successful and although a lot of people were late due to the traffic, most of them showed up. I think we only had 6 no shows in the end which is a record for us!
Your staff were very professional and the guests were commenting on how excellent they were. They were absolutely precise with the timings and the evening went exactly according to schedule. Our staff were particularly impressed by how knowledgable they were about the food and wine too. It was very easy and stress-free for me and I didn't have to worry about a thing. Please pass my compliments on to all your team who were there last night.
The food was stunning and everyone commented on how brilliant the menu was, so please let your chefs know.
Thanks for all your help with the organisation. I know it hasn't been an easy one and between Philippe and myself, I'm sure we were quite demanding. The results were spectacular, however.
I got a lot of positive feedback on the night and this morning, and I've been letting everyone know that it was you guys and Philippe who designed it all!

I wanted to thank you for the totally amazing service you provided for our wedding, Brent and I had the most awesome day and you were all just spectacular. We were completely relaxed and you and your team took care of everything, including my drink obsession and everyone commented on how yummo-licious the food was and the platters were awesome! The food and tables looked amazing....Can you please also forward this onto Simon who was honestly one of the most impressive professionals I have ever met. Simon, thank you so much for all your attention to detail and hard work on the day, you were just amazing. So many people have commented on how well the service ran and that was thanks to you and your team. I really appreciated all your hard work.
