When Drop-Off Makes Sense

Drop-off is the right call when the event is relatively low-complexity and your team is comfortable handling the last 10% themselves - i.e. laying out platters, refilling water, clearing up afterwards. It works well for:

  • Weekly or recurring team lunches

  • Internal meetings and smaller training sessions

  • Casual client catch-ups where a big production would feel out of place

  • Where the catering is designed to support the event, rather than define it

  • Any event where you want good food without paying for on-site staff

When Full Service Makes Sense

Full-service is worth the investment when an event has enough moving parts that someone needs to be actively managing food, timing and guest experience throughout. That's usually the case for:

  • Conferences and multi-session events, where catering needs to be timed precisely around the agenda and considering all dietary requirements can quickly become out-of-hand (see our conference catering guide for more on this)

  • Weddings and milestone celebrations, where service quality is an essential part of the guest experience, not just a logistics task

  • Product launches and client-facing events, where you don't want your own team pulled away from hosting duties to manage catering

  • Any event over roughly 50–80 guests, where drop-off logistics start to become genuinely difficult for an internal team to manage alone


The Question That Usually Settles It

Drop-Off Catering:

How far in advance do I need to order?

Whilst it can vary slightly between products, most of our Express Catering drop-off range is available for next day delivery on orders made before 2pm, delivered to Brisbane City. *Other areas may differ


Do I need to do anything once the food arrives?

Completely depends on what you've ordered and how you want to serve it. Our driver will meet someone from your team on arrival and deliver the food where you want it (Whether that's directly to the event area, ready-to-serve, into the kitchen for you to re-plate onto your own servingware or into the fridge to be served later on). From there on, it's up to you how the food is served and presented.


Can I still get event-quality food with drop-off catering?

Absolutely! Drop-off doesn't mean a drop in quality - it simply means the food arrives ready-made rather than being prepared and served on-site by our team. Our Express Catering range and full-service menus are created in-house by our same amazing kitchen team who never compromise on quality.


What if my order needs to change?

No stress! For orders with enough lead time, changes to your order are easily managed within your own Express Catering account dashboard, where in most cases you can make minor changes to delivery time, inclusions or dietary requirements up to 2 days in advance of your delivery date.

Do I need to have all the details ready before I can enquire?

Not at all! All we need before the first conversation is a rough idea of your event occasion, approximate guest numbers and what you're after. Everything else, like menu choices, dietary considerations and even chosen venue can be worked out as we go along (As long as your timeline allows it). Based on the initial consultation, our team can provide a quote based on what was discussed, and if you're happy to proceed, your date is secured before needing the answers to everything else.


Is full service catering only for large events?

Not necessarily. Whilst it's a must for logistically-packed events like weddings and large corporate functions, full-service catering can also suit smaller, high-touchpoint events such as executive boardroom lunches, client dinners or even at-home canapé events where you just want to stay out of the kitchen. Full-service catering is a suitable option for any event where presentation, service quality and the ability for you to be hands-off is a priority.


What's included in the service?

This varies by package, but our full-service catering includes a dedicate event manager to liase with pre and post event, on-site floor staff and chef(s) to facilitate the setup, service and pack-down of your event. If your event is held at one of our venue partners, we also coordinate with their team to manage all access & logistical requirements - Just another thing you don't need to worry about.
